Ingredients

Cake Batter

1 ¾ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

1 tsp cinnamon

½ tsp nutmeg

½ tsp salt

½ cup unsalted butter, softened

¾ cup brown sugar

2 large eggs

1 tsp vanilla extract

½ cup milk

Instructions

 

Soak the Fruit

In a bowl, combine dried fruits and orange juice.

Let soak for 30 minutes (or longer for extra flavor).

Preheat Oven

Preheat to 170°C (340°F).

Grease and line a loaf or round cake pan.

Mix Dry Ingredients

In a bowl, whisk together:

Baking powder

Baking soda

Cream Butter & Sugar

In another bowl, beat butter and brown sugar until light and fluffy.

Add Eggs & Vanilla
