- 1 can (400 g / 15 oz) chickpeas, drained & rinsed
- 2 ripe avocados, diced
- 1 cup cherry tomatoes, halved
- ¼ red onion, finely chopped
- 2 tablespoons fresh parsley or cilantro, chopped
Dressing
- 3 tablespoons extra-virgin olive oil
- Juice of 1 lemon
- 1 small garlic clove, minced
- ½ teaspoon ground cumin (optional)
- Salt & black pepper, to taste

- Prepare Chickpeas
In a bowl, lightly mash half the chickpeas for creaminess.
Leave the rest whole for texture. - Assemble Salad
Add avocado, tomatoes, onion, and herbs to the bowl. - Make Dressing
Whisk olive oil, lemon juice, garlic, cumin, salt, and pepper. - Toss & Serve
Gently toss everything together until coated.
Taste and adjust seasoning.
