3 cups cooked white rice (preferably chilled/day-old)
3 tbsp sesame oil
1 cup frozen peas and carrots
1 small onion, finely chopped
2 tsp minced garlic
2 eggs, lightly beaten
1/4 cup soy sauce (low sodium is recommended)

Sauté the Aromatics:
Heat the sesame oil in a large skillet or wok over medium-high heat. Add the chopped onion and the frozen peas and carrots. Sauté for about 3–5 minutes until the vegetables are tender.
Add Garlic:
Stir in the minced garlic and cook for about 1 minute until fragrant. Be careful not to burn the garlic.
Scramble the Eggs:
Push the vegetable mixture to one side of the pan. Pour the beaten eggs onto the empty side. Using a spatula, scramble the eggs until they are fully cooked, then mix them back into the vegetables.
Fry the Rice:
Add the cooked rice to the pan. Pour the soy sauce over the top. Stir everything together well, breaking up any rice clumps with your spatula.
Crisp and Serve:
Fry the mixture for another 2–3 minutes, stirring frequently, until the rice is heated through and slightly browned.
